I really love chips, I have them every cheat day and if I could I’d have them every day, at least once! A couple of weeks a go I shared a recipe for baked skinny fries, (you can read it here) but this time I’ve gone for chunky! Sometimes you just need some big fat chunky chips and these ones are healthy too, unfortunately you are gonna have to cut down on the portion size but they are still very filling and if eaten with some chicken or fish and veggies it can be a very nice dinner. These are so delicious that I even had them instead of real chips on my cheat day! One portion comes in at 278 calories.
– Serves 2
3 Medium Potatoes
1 Tablespoon of Olive Oil
1 Teaspoon of Dried Thyme
Salt and Pepper, to season
– Takes 50 Minutes
1. Preheat the oven to 225c. Cut the potatoes in to fat chips, you need them to be similar in size! Parboil the chips until they are just soft, you don’t want them to be so soft that they break about 5-8 minutes is fine.
2. Once the chips are cooked, drain them and add them back to the pan, add the olive oil, thyme and some salt and pepper making sure all the chips are covered.
3. Tip the chips into an oven proof dish and roast for 35 minutes, half way through check the chips and toss them in the dish to stop sticking. Serve!
