So, because it’s been such beautiful weather this past week I’ve actually been craving a nice salad and on Monday I decided to use up a few bits and bobs that I had lying around. I created this simple and very filling salad in a few minutes, which makes it perfect for a quick after work dinner. It’s also super healthy, with plenty of goodness and very little fat, for a large portion of this it comes in at 486 calories but this might actually be too much for some people but not for me!
Ingredients – Serves 2
2 Cooked Chicken Breasts, I had some left over, to make it super quick, cook them the night before
1 Tin of Chickpeas, drained and rinsed
1 Tin of Green Lentils, drained and rinsed
1 Small Red Onion, finely chopped
A Small Handful of Coriander, finely chopped
1 Lemon, juiced
2 Teaspoons of Olive Oil
Salt, Pepper and Chilli Flakes, to season
Method – Takes 10 minutes
1. Shred the chicken breasts and combine with the chickpeas, lentils, onion and coriander. Add the lemon juice, olive oil and combine. Taste and season with the salt, pepper and chilli flakes!
2. I left mine in the fridge for 10 minutes so the flavours would have time to mix properly and it was delicious!
