 About this time of year when the sun finally starts shining and we get a bit of warmth I start craving Greek salad and the perfect thing to serve with Greek salad? Chicken kebabs and pitta bread! It’s so easy to overload the Greek salad with tonnes of feta so by weighing it out and using the low cal/fat version I still manage to have a decent amount. With the kebabs and one pitta bread this comes in at 491 calories and this recipe serves two. These chicken kebabs are great if you’re at work for the day, you just need to quickly mix up the ingredients, chop the chicken and leave it to marinade all day!
Ingredients – Serves 2
For the kebabs2 Large Chicken Breasts
2 Cloves of Garlic, crushed
1 Tablespoon of Oregano
1 Teaspoon of Paprika
1 Teaspoon of Olive Oil
Juice of One Lemon
Chilli flakes, salt and pepper to season

For the salad

100g Light Feta, I use the sainsburys be good to yourself one
1/3 of a Large Cucumber
2 Large Tomatoes
1 Small Red Onion
10 Green Olives
1 Tablespoon of Oregano
1 Tablespoon of Olive Oil
Juice of half a lemon
Salt and Pepper to season

Two pitta breads to serve
4 wooden skewers

Method – Takes 20 plus marinading time

1. Chop the chicken breasts in to chunks, pop them in a large bowl and cover with all the marinade ingredients, mix well and leave for 2-24 hours or as long as you’ve got! Soak the skewers for at least an hour before you’re ready to cook, otherwise they’ll burn.

2. Once the chicken has been marinaded either put the grill on high or heat the griddle pan on a medium heat. Share the chicken chunks evenly between the four skewers and put them on. Cook the kebabs for around 6 minutes on each side, to make sure they’re cooked, pierce and make sure the juices run clear!

3. While the kebabs are cooking chop all the veggies, thinly slice the onion and pop it all in a big bowl. Crumble over the feta, add the oregano, oil and lemon juice, mix it all well and season with the salt and pepper.
