I kind of struggle what to eat in the summer, I love salads but I never know what to put in them and I tend to get a bit repetitive, I’m much more of a winter foods kind of person, I love my stews, soups and curries! I was wondering what on earth to cook for dinner when I saw some gorgeous cherry tomatoes in my local greengrocers and had a brainwave and came up with this healthy combo, cherry tomatoes with feta, chickpeas, spring onions and spinach. Thank god, it was lush! I might have it tonight too, I served it with some simple pan fried chicken which complemented it perfectly and it was so quick, great for a week night dinner! It comes in at 309 calories and 479 if you serve it with a pan fried chicken breast.
Ingredients – Serves 2 very well!
100g Spinach, washed and dried
4 Spring Onions, finely sliced
16 Cherry Tomatoes, cut in half
400g Chickpeas, drained and rinsed
100g Low Fat Feta
Juice of a Lemon
1 Teaspoon of Olive Oil
Salt, Pepper and Chilli Flakes, to season
Method – Takes 10 Minutes
1. Add the spinach to a serving dish, layer the cherry tomatoes and spring onions on top and add the chickpeas and crumble over the feta.
2. Drizzle over the olive oil and lemon juice, taste and season. Give it a good mix without disturbing the salad. Serve!
