This has been on my list of recipes to cook for months now but because Dano isn’t a fan of vegetarian food finding an evening to cook it was tough. Last week when Dano asked me to make him burgers for dinner I thought he could have his beef and I could have my chickpeas! I adore chickpeas anyway, you can probably tell by the huge amount of recipes and the flavours paired with them in this recipe are perfect. I got the recipe from the BBC Good Food website but left out the onion and to be honest I really don’t think you need it. I served my burgers without a bun but with potato wedges and a big green salad! Each burger comes in at 130 calories.
Ingredients – Makes 4 Burgers
400g Tin of Chickpeas, drained and rinsed
Zest of a Lemon
Juice of Half a Lemon
1 Teaspoon of Ground Cumin
2 Tablespoons of Fresh Coriander, finely chopped
1 Egg, wisked
1 Teaspoon of Olive Oil
Salt, Pepper and Chilli Flakes, to season
Method – Takes 35 Minutes
1. In a food processor wizz the chickpeas, lemon zest & juice, cumin, coriander, egg and some seasoning. Add to a bowl and mix with the breadcrumbs and shape in to 4 burgers, chill for at least 10 minutes.
2. Heat the oil over a medium heat in a frying pan, fry the burgers for 4 minutes on each side, checking occasionally in case they burn. Serve!
