I’m a self confessed Harissa addict. It’s so good, it makes anything taste amazing and I use it at least once a week. This is one of my favourite ways to use Harissa, it makes a great week night meal, served with 50g of couscous each it’s filling, healthy quick and easy! Served with the plain couscous it comes in at 472 calories!
Ingredients – Serves 2
2 Chicken Breasts
4 Tomatoes, halved
2 Peppers, cut in to chunks
2 Garlic Cloves, crushed
30g Belazu Rose Harissa (it’s expensive but worth it)
Method – Takes 40 Minutes
1. Arrange chicken and chopped vegetables and garlic in a baking tray. Cover with the Harissa paste making sure everything is covered.
2. Roast in the oven for 35 minutes until the vegetables are turning brown and the chicken is cooked through. Serve with couscous.
