Everyone loves jammy dodgers right? Well I thought I’d have a go at making my own, I saw thisrecipe on the BBC Good Food website and I could resist and both Dano and my dad are big fans of jam and biscuits, whats not to love? I follow the recipe exactly because baking scares me a little bit and I’m worried that if I change anything it’ll go hideously wrong. I did swap the strawberry jam for blackcurrant though but only because that’s what I had in the fridge! They come out almost with an shortbread type texture which is lovely and they are so easy to make.
Ingredients – Makes 12
200g Self Raising Flour
100g Caster Sugar
100g Butter, softened
1 Egg, Lightly Beaten
4 Tablespoons Jam
Method – Takes 25 Minutes
1. Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor.
2. Add enough egg to bring the mixture together to form a stiff dough. Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet.
I may have overfilled mine a little!
3. Space them out as the mixture will spread when baking.Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the center. Bake for 10-15 minutes until slightly risen and just golden. Cool on a wire rack.
