I actually forgot how much I love this pasta salad but as the weather is finally getting warmer salads are back on the menu and this is one of my favourites. I made this for my lunch the other day and fell back in love with this classic combination, also because the orzo pasta is so small it only takes 7 minutes to cook so all in all this salad takes 10 minutes from the fridge to your plate! I know a lot of people think that you can’t have pasta if your trying to lose weight but I firmly believe in everything in moderation! This salad comes in at just 303 calories!
Ingredients – Serves 1
50g Orzo pasta or any other small pasta shape
50g Ligh mozzarella (I like the sainsburys one)
1 Medium sized tomato
A few fresh basil leaves
1/2 Teaspoon of olive oil
Salt and Pepper for seasoning and chilli flakes if you like a bit of spice!
Method – Takes 10 minutes
Cook the pasta according to the packet, mine only takes 7 minutes! While the pasta is cooking chop up the tomato into small cubes and tear up the mozzarella and basil leaves into small pieces. Once the pasta is done, drain and rinse with cold water until chilled. Pop the orzo in a bowl and add the tomato, mozzarella, basil and season with salt, pepper and the chilli flakes then drizzle with the olive oil, mix well and serve!
