This was a special for Dano. He loves seafood, prawns especially and I picked up some for £2.50 in Sainsburys so I thought I make him a summery curry. I always like to add some vegetables to a curry to make it healthier and to bulk it out a bit, the pea and spinach is a nice summery combination which give it a nice fresh taste and really compliments the prawns! I was a bit naughty and as well as 50g basmati rice I has a mini naan bread but it was Friday night so I think I deserved a bit of a treat! With the naan bread and rice this dish came in at 515 calories.
Ingredients – Serves 2 (Big portion so probably left overs!)
1 Tablespoon Olive Oil
1 Medium Onion, finely sliced
Thumb Size Piece of Ginger, finely chopped
2 Garlic Cloves, finely chopped
1 Birds Eye Chilli, finely chopped
1 Teaspoon Black Mustard Seeds
1 Teaspoon Ground Coriander
1 Teaspoon Turmeric
2 Teaspoons Cumin
2 Teaspoons Garam Masala
400g Can of Chopped Tomatoes
225g Cooked and Peeled Jumbo King Prawns, defrosted if frozen
80g Petit Pois, cooked according to packet instructions
Handful of Coriander, finely chopped
Salt and Pepper, for seasoning
Method – Takes 50 Minutes
1. Add the olive oil to a large pan, fry the onion on a medium heat until it starts to turn translucent and goes soft. Add the garlic, ginger and chilli, fry for a minute, add the spices and fry for a further minute.
2. Add the chopped tomatoes and a 100ml hot water, turn up to a high heat and bring to the boil, turn down and let it simmer for 30 minutes.
3. Add the prawns and simmer for 5 minutes until they are hot, add the peas, spinach, coriander and cook for a further 5 minutes. Taste and season then serve!
