This is one of the dishes I always make when I get my hands on some haddock, haddock is really expensive where I live so it’s a bit of a treat! This is a great dish for when you just want to stick something in the oven and not have to worry about it too much. The combination of the feta with the Mediterranean vegetables creates a gorgeous juice which gets soaked up by the potatoes. This dish comes in at 510 calories for a large portion and it’s super filling!
Ingredients – Serves 2
400g New Potatoes, cut in to bite sized chunks and par boiled
4 Tomatoes, halved
2 Peppers, cut into chunks
2 Teaspoons Olive Oil
2 Teaspoons of Oregano
1 Garlic Clove, Crushed
300g Haddock Fillets
100g Low Fat Feta
Salt, Pepper and Chilli Flakes to Season
Method – Takes 35 Minutes
1. Pre heat the oven to 250c. Add the the par boiled potatoes, tomatoes and peppers to a large oven proof dish. Add the olive oil, oregano, garlic cloves and sprinkle with the salt, pepper and chilli flakes. Roast in the oven for 20 minutes.
2. Take the dish out of the oven and add nestle the haddock fillets in between the vegetables, crumble over the feta and bake for a further 15 minutes. Serve!
