I had some butter beans sitting around in my cupboard and I couldn’t think of a way to use them, I searched my favourite websites but nothing appealed to me. I eventually decided that they’d go pretty well with feta and tomatoes and added the couscous to make it a bit more filling for a lunch I could take to work. It would also be lovely as part of a picnic or as an accompaniment to grilled chicken or fish, it’s easy to make and takes about 30 minutes and it comes in at just 328 calories!
Ingredients – Serves 3 (Weird number I know but I tend to make my lunches in 3’s for half the working week!)
450g Tomatoes, halved
2 Teaspoons of Olive Oil
A Pinch of Chilli Flakes
400g Tin of Butter Beans, drained and rinsed
100g Light Feta, crumbled
A Small Handful of Fresh Basil Leaves, torn
Salt and Pepper for Seasoning
Method – Takes 30 Minutes (Plus time for the oven to heat up!)
1. Preheat the oven to 225c. Once the oven has heated up, add the halved tomatoes to a oven proof dish, drizzle with the olive oil and sprinkle over the chilli flakes. Roast for 30 minutes or until they’re softened and starting to turn brown.
2. While the tomatoes are roasting, cook the couscous according to the package instructions.
3. Once the tomatoes are cooked, cut them into smaller chunks. Combine the butter beans, cooked couscous, crumbled feta, roasted tomatoes and torn basil leaves in a large bowl, taste and season with salt and pepper. Serve warm or cold, it’s delicious both ways!
