I’ve been looking out for some edamame beans for a while now but I couldn’t seem to find any of my local supermarkets, sometimes living in Devon can be a pain! Eventually my mum found some frozen ones in Marks and Spencer, they came in a mix with broad beans and peas, two of my favourites. So I got my thinking cap on and came up with a bean salad, I love salad this time of year, but I still need to feel full so I added cannellini beans, red onion, low fat feta cheese, Greek basil and dressed it with a drizzle of olive oil and lemon juice! I was a little worried that this wouldn’t fill me up but I was wrong, this salad was actually so filling, you don’t even need that much, it was delicious and tasted very fresh! It came in at 219 calories if you share between 6 or 328 for 4.
Ingredients – Makes 4-6 servings depending on how hungry you are!
1 Bag of Marks and Spencers edamame, broad beans and pea mix or 500g of your favourite beans
1 400g Tin of Cannellini Beans
1 x 200g Reduced Fat Feta Cheese
1 Medium Red Onion
A Small Handful of Greek Basil (you can use regular basil, it’s just what I had at home)
A Lemon for Juice
1 Tablespoon of Olive Oil
Salt and Pepper to Season
Method – Takes about 10 minutes
1. Cook beans (not the cannellini!) according to the packet instructions. While they’re cooking thinly slice the red onion, chop the Greek basil and drain the cannellini beans.
2. Once the beans are cooked, drain and rinse with cold water until they are cool. Mix the beans in a large bowl with the cannellini beans and the red onion, crumbled the feta cheese over the beans and add the basil. Add the lemon juice, drizzle over the olive oil, season and mix throughly making sure everything is well combined and covered in the dressing.
3. Serve immediately. It’s also good the next day!
