Fruity TeacakeHello, I hope you are all enjoying a weekend in the sunshine! I’ve got a cake recipe to share with you all today, I realised that I’m quite selfish with my sweet recipes and tend to choose something chocolately and Dano isn’t a massive chocolate fan so I made something more to his taste. I foundthis fab recipe on the BBC Good Food website and thought it sounded exactly like something Dano would choose for himself and it’s something different that I’ve never done before. Bonus too, it’s not to bad for you, if you get 12 slices out of it it’s only 231 calories per serving! Ingredients – Serves 12 300g Mixed Dried Fruit225ml Hot Tea (I used Earl Grey!)Juice and Zest of 1 Orange50g Butter, softened100g Light Brown Sugar1 Egg225g Self Raising Flour4 Tablespoons of Demerara SugarMethod – Takes 1 Hour and 15 Minutes (Plus Soaking Time)1. Place the dried fruits in a bowl and pour over the hot tea, orange juice and zest. Cover with cling film, then leave for at least 4 hrs or better still overnight.FruityTeacake Recipe


2. Heat oven to 180C/160C fan/gas 4. Grease and line the base of a 2lb loaf tin. Beat together the butter and sugar until creamy, then beat in the egg followed by the flour. Carefully stir through the fruit mixture. Spoon the mixture into the tin, then smooth over the surface with the back of a spoon. 2. Bake for 1 hr or until a skewer inserted into the centre comes out clean. Leave to cool in the tin, then turn out, cut into slices and serve.
