Chocolate and Mint Cheesecake

This is one of the easy dessert recipes that can be done in five steps. Moreover, this is a perfect balance of dark chocolate and luscious cream cheese that are laced with refreshing mint.

The ingredients are as follows:

  • · 185g unsalted butter, melted
  • · 1/4 cup (25g) good-quality cocoa, sifted
  • · 1 cup (220g) caster sugar
  • · 2 eggs
  • · 1 cup (150g) plain flour, sifted
  • · 50g dark chocolate, melted, cooled

Mint topping

  • 1/3 cup (75g) caster sugar
  • 1 bunch mint, leaves picked
  • 250g cream cheese
  • 3 eggs
  • 1/2 tsp peppermint extract (see note)
  • 100ml thickened cream
  • 2-3 drops green food coloring

Step 1: Set the oven to 160 degree Celsius. Grease and line the cake pan with baking paper.

Step 2: Put cocoa, sugar, butter, eggs and flour together. Mix well and press it firmly into the baking pan and get ready to bake it for 15 minutes. Cool it completely.

Step 3: For the mint topping, put sugar, ½ cup of water and mint in a sauce pan over a low heat. Add the sugar and stir it until it dissolves. Increase the heat to bring the mixture to simmer for three short minutes. Set aside then completely cool.  Twist the sugar syrup, discarding the solids. Then, place the cream cheese in the food processor and whiz it to soften it. Moreover, add cooled sugar syrup, peppermint extract, eggs, food coloring and cream until smooth.

Step 4: Pour the cheesecake mixture into the pan and wrap the latter with foil making it watertight. Place it in a deep baking dish and fill it with sufficient boiling water to come halfway up to the sides of the cake pan. Spend 25 minutes to bring it to bake. Remove from oven and refrigerate for 2 hours or more.

Step 5: Cut the cheesecake into different slices. Sprinkle it over the cooled melted chocolate and serve.

Choc-Caramel Ice Cream Tarts

This is deliciously tempting. It looks remarkable as well. This triple- chocolate delicious dessert recipe is a winning end to every dinner party. Your kids won’t certainly share it even with you!

Ingredients:

  • · 4 x 72g Snickers bars, coarsely chopped
  • · 2 1/2 tbs thickened cream
  • · 8 scoops Peters Light & Creamy Choc Caramel & Vanilla Swirl ice-cream
  • · Dark chocolate, shaved, to decorate

Chocolate pastry

  • 225g (1 1/2 cups) plain flour
  • 150g butter, chilled, chopped
  • 2 tbs icing sugar mixture
  • 2 tbs cocoa powder
  • 3-4 tbs milk

To do it, here is how!

First, process the butter, cocoa powder, flour and icing sugar in the food processor until it becomes similar with fine breadcrumbs. Add milk and turn it into a lightly floured surface until it smooth. Cover it with a plastic wrap after shaping it into a disc. Put it in the fridge for 30 minutes.

Second, divide the dough into 8 parts. Roll out the part till 3 mm thick. Line a fluted tart tin with base that can be removed and with the pastry too. Trim the excess. Do the same procedure with the dough portions. Use a fork to pierce the bases all over. Put it in the fridge for 20 more minutes.

Third, heat up the oven for 200 degree Celsius to bake the pastry for at least 15 minutes or until the pastry turns crisp and dry.

Fourth, stir in the Snickers together with the cream in a sauce pan over an average cooking temperature for 15 minutes until the Sneakers melt. The mixture must appear smooth. After doing so, spoon the mixture into the tart cases and set aside until it cools.

Fifth, top the tarts with ice cream or any topping that looks magnificent with your tart.
