When the sun finally starts to come out and we begin the see the first signs of summer I always start craving Greek food, it always seems to taste so much better when you eat it in the garden when the sun is shining! This is quite a simple dish with a lot of flavour, it’s full of tasty vegetables and healthy protein, so it fills you up and leaves you feeling satisfied and it’s still a super healthy dish. It doesn’t really matter what veggies you use for the couscous, as long as they are all chopped up the same sort of size you should be good to go! Ingredients – Serves 2For the roasted vegetable couscous:2 Courgettes, sliced2 Large Tomatoes, cut into 82 Peppers, cut into 81 Onion, cut into 61 Tablespoons of Olive Oil, split in half1 Teaspoon of Dried Oregano1 Teaspoon of Chili FlakesSalt and Pepper, to seasonJuice of Half a LemonFor the chicken : 2 Chicken Breasts, butterflied1 Teaspoon of Olive OilJuice of Half a Lemon1 Garlic Clove, crushedA Small Handful of Greek Basil Leaves, finely choppedA Pinch of Chili FlakesSalt and PepperMethod – Takes about an hour1. Pre heat the oven to 220c. Add the chopped vegetables to a large roasting dish, add half the olive oil, the oregano, chili flakes and salt and pepper. Shake to coat the vegetables in the seasoning and stick in the hot oven for 40 minutes giving it a shake half way through.2. Marinade the chicken breasts in the olive oil, lemon juice, garlic clove, Greek basil leaves, chili flakes and salt & pepper. If you have time you could marinade the mix for a couple of hours but the 25 minutes it takes for the veggies will be fine.3. 25 minutes into the roasting time for the veggies, heat a frying pan on a medium high heat and add the chicken breasts, cook for 6-7 minutes on each side until they are cooked all the way through.4. Make the couscous according to the package instructions, when the vegetables are cooked add the couscous to the roasting dish and add the remaining olive oil and lemon juice. Mix it all together and taste, add more seasoning if necessary.5. Serve the vegetable couscous with the Greek chicken and some green salad if you fancy.
